Frog Buttress would be the go although the weather might be getting a tad warm by the time you roll past.
I'd stay coastal and miss the New England area (sorry folks) and then get back on the rock in the Port Stephens/zawn/Bulahdelah area.
South of there are a few sandstone crags on the NSW Central Coast, and then ther is mixed quality climbin in Sydney itself. Really though, if in Sinny, head west for two hours and climb in the Blue Mts which has a stupid amount of crags and a positvly daft amount of routes, of all grades, quality and styles.
Further south is great sandstone seacliff climbing at Point Perpendicular, and nice granite (inland) at Canberra (Search on Booroomba Rocks).
If going via the coast to Vic, there is some climbing, albeit limited, at Ben Boyd National Park.
