crm114, just as a heads up, we like to keep places like Apostles off public forums, as it is technically a 'no go' for climbers due to varying levels of 'discussions' climbers have had with the land owners over time.
However, the SARD/NARD/WARD regions are perfectly fine to mention, and if you ever head up this way, you may find that these places have a lot of familiar looking climbs.

The climbing guide posted above is a little outdated (new climbs currently being added), however there are plans in the works to have this updated soon.
For the most up to date info on NT Climbing, make sure you check out the ClimbingNT forum, as we are always updating our members only area with new routes, route changes, variants, conditions, etc and we are also currently developing a Top End bouldering guide for those who prefer bouldering.
As for climbing in Central, you can easily keep yourself busy for weeks climbing routes most people never knew existed, let alone climbed, same again for people visiting the Top End.
