There is a fair bit of climbing info on this site http://www.stonedance.com/
Bariloche will be freezing in July. We were there in May and it was getting cold.
One of the coolest things we did on our trip was to go from Arica, Chile to La Paz, Bolivia spending a few days in the small village on the Chilean side. There are very few toursits here and there is lots of hiking and easy ascents of volcanoes to be had. Most people go from Chile to Bolivia via San Pedro de Atacama (overun with tourists) and the salt plains (Salar de Uyuni).
