you can get the best of both worlds at Red Rocks plus you get Vegas... it's a must do. Just don't go in the (Northern) summer.
Oh, Owens River Gorge is worth a visit -- lots of bolts but I remember it being mostly vertical.

Getting to Red River Gorge means driving for days (but you will see the 'real' America) or domestic flights in the US (think bus with wings) - it is well worth the effort but if it were me, I would stick to the left coast.
I've not climbed Rifle but between there and Red River Gorge there's not much rock to climb.
