Many years ago I did a passage on the HM Bark Endeavour replica. The new ship has the equipment she needs to be in survey but it's all stashed where you can't see it. The engines, the galley, and the toilets are in the bilge but from the gundecks up she's as she was when Cook was tooling around the Pacific. There's nav gear in the binnacle but it's usually locked away. The crew used sextants and plotted courses pretty much the same way Cook's crew would have done. That was awesome to see.
