The thing to remember when "cleaning" granite is to tap the loose flake off, not pry it off with leverage. More chance of a hold being "left behind" when the flake is tapped. Justification is that a loose flake is dangerous there for must be removed. If you tap it with a hammer you'll leave an edge, if you prise it with your nut key you'll leave a horrible sloper. It's not chipping, it's making the route safe.
