Apparently hares are very good eating. I've seen
Hugh Fearnley-Whittingstall pick one up off the side of the road, which was a couple of days dead (it was England, it's cold). He gutted and cleaned it, then roasted it much as one would lamb shanks in a big heavy pot with lots of red wine. Reckons wild hare is his favourite meat by a mile, and a total delicacy. |
