I thought Hobart and Freycinet would be great places for that sort of holiday. There's plenty to do in and around Hobart, with proper accommodation and pubs in town, with the Organ Pipes and Mt Wellington 20 minutes up the hill. They make a lot of wine in Southern Tassie and there's decent wineries north of Hobart.

Freycinet looked a good option too. There's wine around the opposite side of the bay from the climbing, up to about an hour's drive away. Accommodation is probably limited to the pub or a good caravan in the park though. There's beaches on both sides of the peninsula and all sorts of climbing dotted around the place. I'd happily go back to either of those.
