"Coopers used to brew in Yorkshire Squares, which are basically big open swimming pools where the fermentation takes place. The resultant beers are often very estery, and that's where tat fruit flavour comes from. They also used to bottle homebrew style, with the yeast used for fermentation finishing the job, and adding carbonation in the bottle.
These days they use stainless steel conicals, just like you'd be familiar with in a winery. Conicals are good for lagers, but not optimal for ales, although the convenience and ease of use means that it becomes a necessity. So the fruity esters are less prevalent. Also, the Ale is now filtered, and bottled with a neutral, flavourless bottle yeast for carbonation. Again, this influences the final flavour, but is a commercial imperative as it extends shelf life."
