The best place to start, I suggest, is with the followig website. It gives an excellent overview of what is going on down here in tassie:

I suggest if you can justify the $20 to $30 outlay, that you buy a copy of the "Craglets" climbing guide. Its a mega guidebook that covers most of the popular climbing areas in the state, Including Freycinet.
For trad climbs up to grade 19, id recommend you check out the Freycinet Peninsula (1/2 way down the east coast, world class granite climbing). The organ Pipes offer very good face/crack climbing within 20 minutes of Hobart from grade 15 to 25 (note this cliff has its own guidebook, and is not in Craglets), and the Gorge in the center of Launceston has 100's of trad cracks and bolted faces within walking distance of the centre of town.
Frenchmans Cap, the Acropolis and Federation Peak offer big walks and big climbs, but also lots of rain....
For sports climbing, Adamsfield which is covered in Craglets is a sports climbing area about 1.5 hours from Hobart. I havent been there, but apparently it is 10 to 15 m high well bolted routes up overhanging conglomerate boulders. Grade 20 to 30 routes. Mount Brown on the Tasman Peninsula has some nice sport climbing, although the best of it looked grade 25+.
