The local spelling up here is actually "Bluies", though (like the pronunciation) does vary a bit from clan to clan. If you ever have reason to travel down the mountain, in search or food - or good coffee, you find that the usage varies increasingly. For example, down in the outer suburbs of Blackheath "Blueys" is not uncommon, and as far away as Katoomba you find the interesting phenomenon of "Bluies" being more prevalent in South Katoomba, whereas "Blueys" is the more politically correct spelling in North Katoomba. And if you are ever compelled to leave the safely of the Mountains and make an expedition all the way down into the wilderness (quite reckless and unnecessary if you ask me) then you should be prepared to encounter the usage of "Blueee's" and "Blueeease" most commonly around Penrith and Cronulla respectively.
