Staying in Christchurch? If you don't mind paying just a little extra, the Christchurch YMCA is in the city, walking distance to the gear shops, nightlife, and supermarkets, and has a kick-arse bouldering room and climbing wall. Also, it is not as dodgy as some backpackers, and a twin room shares a bathroom with only one other twin room.
The Pak'n'Save is the cheapest supermarket I have come across in Christchurch. It is a giant, warehouse style building, and you pack your own groceries into bags and boxes (try and get bananaboxes - they are strong and are waxed cardboard - a little waterproof).
Plane flights are booked through Mount Cook Ski Planes, the only company that operates out of Mount Cook Village. You have to book with them, and they will organise the flights to best fit the passengers wanting to fly. Thus you may end up going alone in a smaller plane, with another pair, or with a guideed group in a larger plane. And they don't fly every day, it is very weather dependent. We all have stories about being stuck in Mount Cook Village for four or five days waiting for a flight.
And I think it is likely you will have to pay! They split the cost based on passengers, estimated fuel usage, size of plane, etc.
