Canberra, but it's two hours from the Surf. Also, not really 'classic'; Australia, but a very livable city. Granite.

Sydney - if you want to live in the inner west or east or northern beaches, then it may fit your time criterea. Under 30 mins commute is very low for Sydneysiders. Sandstone. The Northern beaches provide probably the best easily accessible surfing of reasoable quality for a major city globally (big call, but entirely arguable).

Melbourne - no idea, only ever been there to drink in wine bars and eat pompous food. Which is not always a bad thing.

Most cities will require a 1-2 hr drive to access reasonable climbing. Live near the beach. Don't come to Austrlaia, from Canada, to live in Suburbia. You deserve better.

What type of enguineer are you ? This will make a big difference to your employability in different areas.
