Harnesses, as with all kit, are personal. Depends if you want the moulded plastic gear loops (i've seen them break, cant repair them, leaves the harness ~useless for anything but toproping) or fabric strip+plastic tube, how many loops, speed-buckles or not, double-adjustable front or single, lots of padding, moulding etc. Go try on a dozen at different stores, hang in them, get a feel for them. You'll be hanging in it for quite a while at some stage. Quality / features = $$...

Quickdraws - I've got a dozen short draws and half a dozen extenders. Doesn't mean take them all up every climb, but as Sonic said, best not to be caught short. Personal preference - keylock nose. Costs a few dollars more each draw, but makes things that much easier, less snagging. Wire-gates at the rope end if you want, i'd avoid them at the gear end, one less thing to worry about with bolt-plates.
