Hmm, when I'm making pancakes I do them over a fairly low heat so that they puff up nicely.... low heat is ok for teflon. If your pots get to the stage where there's teflon flaking off into your food, time to chuck them out! I think it's teflon in lungs that is the problem, I'd say it's relatively inert to eat, hence the smoking of the flakes in the dried grass leading to paralysis.
