Not sure if you mean mountaineering or rock, and also not sure what part of Japan you're talking about for your tacked on week.
Addressing only the things I know about, there is climbable rock in the Tokyo area at that time of year. Nothing, however, is so big or spectacular that I'd rate is as worthy of a lot of extra hassle just to photograph, with the possible exception of Jogasaki. If you decide to go for it, and end up in the Tokyo area on a weekend, I'd be happy to head out with you. Not able to make any guarantees, however, since I'm subject to family and work constraints.

I'll second the comment that Okinawa is a cool place. Not quite as tropical as you might like during the winter, however. I've only been during the warm months, but by hearsay I gather that swimming and water sports are questionable during the winter. Also, the word is that the rock is SHARP - stock up on tape.
By the way, there's an outdoor related Japan forum where you might re-post your inquiry. At least one regular on there guides up in Hokkaido, and does quite a bit of winter stuff. I think he may even be from Oz originally - he goes by Hokkaido Bushpig. Here's the link:
