My partner and I climbed all through the eastern seaboard from New York, Kentucky, Tennesse and Texas from early January to late February. It was cold but not too bad - we'd been ice climbing in Canada earlier.

My pick would be Enchanted Rock (near Fredricksberg, Texas) and Austin, Texas.

Chattanooga, Tennesse was also a blast - esp if you are a boulderer. There are great wally worlds for your rest days. Get the double ticket for Ruby Falls and See Rock City (yes, that is the name of the place). Great ab work out - we were nearly wetting ourselves with laughter. The Americans just didn't see the irony of these places. However the Aquarium there is one of the most awesome places I have been - no sarcasm. I went twice it was so cool.
