I have been to Hueco ,Enchanted Tower and Cochise Stronghold in December - cold nights but perfect conditions in the day. Red Rocks would also be okay. The thing I found was to check the altitude of the climbing area aswell as the location. We didn't realise how high some of these areas are a got chased out by the cold at Wild Iris and other areas even as far south as Arizona. Stay low and stay in the south. Maybe consider places further East like New River Gorge Kentucky - looks like a nice area for climbing not sure about the locals though.
