There are so many! Most are of short stature, but are generally in beautiful areas. Here are my faves...

Bangor (as above)
Bonnet Bay (weird bolting at the top anchors!)
Earlwood (Not many climbs, but good moderate trad. Short)
Mt Keira (Good easy trad. Watch out for the leeches. Tricky leads with some sandbags)
Cathedral (Harder climbing, but great fun and you can canoe in. The 18 crack is killer! :) The second bolt on the 17 is still too high, but a good climb)
Mount Alexander, Mittagong (a bit further afield, but really nice. There is a great cafe also)

Bouldering at Jannali and the Fish Boulders cannot be missed

I haven't climbed there but I did check out Stanwell Tops. Looked alright.

The best part about southern sydney crags is that they are generally empty. You can have the whole place to your self (well except for Mt Keira). And no bad traffic jam on Sat/Sun arvo
