If you want to trek, there are two trekking the Andes books by Lonely Planet which are good. You'll want the one for the northern Andes. There is plenty of trekking to be done and if you want to do it, take a multi-fuel stove and your tent. All of the tourist type walk (except Machu Pichu) can pretty much be done on your own and you'll appreciate the freedom that having a good tent and stove can give you. Just check out what the local adventure agents are offering and see if you can do it yourself. You can buy/rent stuff in some places, but it's a bit hit and miss.

I would definitely go to Huaraz, as it's just a great place. Walking in the Cordillera Real in Bolivia - near La Paz. And I would eat Ceviche in a restaurant in Lima, Peru, called Restaurant Heidi or something like that. It's in the Footprint guidebook.
