Exodus 6 (Mitre Rock) is a great beginners climb - it is nice and steep, not too ledgey, fairly straight and has plenty of great gear.
D Major 9 - is great for the same reasons - especially the first pitch - the second is a bit less straight and more intimidating but you can always just walk through the hole after the first.
A couple of weeks ago I discovered Nude Balloon Dance (7) on Mitre Rock and thought that was great - getting off it is a bit annoying though.
There are some nice easier routes with good gear up on Charity Buttress and Bushrangers also has a few good ones.
Just realised you probably weren't talking about beginner leads so this might not be so relevant.
