It doesn't take that much to create a coffee habit apparently -- a week or two of regular (daily) use starts having an effect on your brain. Caffeine is an adenosine antagonist: it works by blocking adenosine receptors. Adenosine, amongst other things, helps you calm down. Your brain works out the adenosine isn't working like it used to, so it starts building more receptors and cranking out more adenosine. When you wake up in the morning, long after yesterday's caffeine has drained out of your system, you're awash with all that extra drowsy-inducing adenosine doing its thing in those extra receptor sites. You need to push caffeine into your brain to clog up those extra adenosine receptors to get back to normality, whatever that is.
