Go the grill. As far as cheese gos I like to live dangerously and mix it up a little bit. Try half tasty, half mozzarella.
Off topic but even nicer is :-
Grated pumpkin, chopped coriander, crumbled feta and a drizzle of oliveoil (a touch of garlic is nice to). Mix it all nicely. Spread a little bit of pasta sauce on pita, pumpkin on top of that (not to thick) and bung it in the oven.
Delish.
Repeat a couple of times and take those left over to your nearest crag to enjoy (again) for lunch.
