I guess this question relates to the descriptions in the Eastern Vic guide. As you can see from the responses so far everyone has a different answer.
If the guide says a route is run-out it normally means that if you are an average climber and the grade is around your normal limit then you will be in a potentially dangerous situation. How dangerous is difficult to judge as there is no convention for rating the danger of a route. So it might mean there are sections when you are 4-5 metres above your previous good placement and well away from the deck or, it might mean there is only one runner on an entire 30 metre pitch. Most guide books will normally describe the later as dangerous rather than simply run-out but not always. If the guide says a route is run-out then you need to take a look and make your own decision. Be prepared to down climb if you're outside your comfort zone.
